- How long can I store your products when fresh? When frozen?
- Our desserts are shipped in perfect condition, and will arrive either frozen or slightly thawed. For best results, please place the box you receive in your freezer as soon as possible.
Our frozen products will last 6 to 9 months in your freezer.
Our thawed products will last 3 to 7 days in your refrigerator.
If any of our products remain at room temperature for an extended time period, discard it and do not eat.

The new, stronger company is pledged to combining the traditions of true French pastry with the freshness, beauty and innovation of California cuisine. We moved our headquarters and manufacturing base from San Rafael to a much larger facility in Richmond, CA in 2005.

- Frozen Croissants & Sticky Buns
- Our frozen croissants are available exclusively through Williams-Sonoma. Put the croissants in your freezer immediately upon receipt. Keep frozen until ready for use. The shelf life is 3 months, if properly frozen.
- PREPARATION AT ROOM TEMPERATURE
- Place frozen croissants on parchment lined baking sheet.
Let rise at room temperature (68°F - 72°F) for approximately 9 hours. - Preheat oven to 375°F.
- Optional: Lightly beat 1 egg with 1 Tbs. cold water. Gently brush croissants with the egg wash.
- Bake until golden brown, about 20 minutes.
- Place frozen croissants on a parchment lined baking sheet.
Let rise in a proof box (80°F - 90°F with 90% humidity) for approximately 2.5 to 3 hours. - Optional: Lightly beat 1 egg with 1 Tbs. cold water. Gently brush croissants with the egg wash.
- Bake until golden brown, about 20 minutes.

- Crème Brulee
- Defrost 1-2 hours in refrigerator.
Just before serving, sprinkle top evenly with sugar and caramelize with a culinary torch. If you do not own or do not want to use a culinary torch, simply thaw and serve. The torch is used to create a crunchy exterior shell.
- Defrost 1-2 hours in refrigerator.
- Crème Brulee with Caramel Glace
- Defrost 1-2 hours in refrigerator.
Open the caramel packet and squeeze the contents onto the surface. Allow an hour at room temperature for the caramel to spread and smooth out. If you prefer a crunchy exterior shell, do not use the caramel. Instead, follow the directions for regular Crème Brulee.
- Defrost 1-2 hours in refrigerator.
- Molten Chocolate Lava Cake
- Defrost for 1-2 hours in the refrigerator. Bake defrosted cakes in a preheated oven at 350(o) F for 10 minutes, or microwave defrosted cake for 10-20 seconds, depending on microwave strength.
- Duos, Cheesecakes, Tarts & Classic Cakes
- Defrost in your refrigerator. The time can vary from 1-2 hours for the mousse cakes, up to 5-6 hours for the cheesecakes.
- Mousses & Tetons
- Remove plastic collar or mold before defrosting. Defrost for 1-2 hours in your refrigerator.
