successful 2008 Holiday Season, Galaxy jumps into 2009 with an exciting

This year at the San Francisco Fancy Food Show (Jan. 18– 21, 2009), we
launched our newest addition to the Galaxy Desserts line-up: our
Mini Mac’aron Dessert Slider. These adorable “hamburgers” are made
in the classic French tradition using our signature Parisian macarons -
sandwiching two petite sesame-topped “buns” together with a dark
chocolate ganache “patty” and a slice of white chocolate “cheese.”

We also presented our collection of mini and bite-size desserts in the
“What’s New What’s Hot” Product Showcase. Those items included the
Cannelés, Classic Mousse Duo Collection, Macarons, and our new
Mini-Mac’aron. Thanks to all of you for stopping by our booth and for

To kick off the Fancy Food Show, Galaxy celebrated by providing a tour of
the Galaxy Bakery where we produce all of our delicious desserts and
pastries. After the tour, we hosted a breakfast where our guests had the
opportunity to try a variety of our morning pastries and macarons. In
attendance were some of our distributors and buyers. The tour was hosted
by Paul Levitan and Jean-Yves Charon!

We have so much to be thankful for as we head into 2009. We appreciate and
value each and every customer we’ve had the pleasure of doing business
with over the years. It’s this appreciation that sparked an idea over
champagne and desserts one night – we’d like to select one customer each
quarter and recognize them on our Newsletter. This issue, the Customer of
the Quarter is Atlanta Foods International. We’ve been working
with Atlanta Foods for over 2.5 years now. They are one of the
leading distributors of specialty and gourmet food products to both the

One of our eight core values here at Galaxy Desserts is
“sustainable”. In an effort to become more energy-efficient and Green
Business certified, Galaxy Desserts is participating in the PG&E “Smart
Lights” program. In the Fall of 2008, PG&E installed computers in the
Galaxy Desserts freezers that monitor and control the refrigeration,
compressor and condenser levels. So far, we have seen savings of 25% on
our energy bills. Over the next year, we hope to save 135,000 kilowatt
hours of energy.
Through the Bay Area Green Business Program, Galaxy Desserts plans to
implement even more programs to improve our environmental efficiency and
sustainability. We will continue to keep you posted on our journey to

Tom Michenfelder—Tom came to Galaxy after 6 years at Hobart, the preeminent food equipment company. Tom is our Building Maintenance Manager, which requires him to ensure that all of our production equipment remains in tip-top mechanical condition. However, his notable position does not keep him from having to change the occasional light bulb! Tom spends his spare time with his wife, Katie, and daughters, Abby and Alara. When he’s not camping, Tom likes to take Otis, his boxer-pit mix to the
dog park on weekends.
